Garlic Day Recipe: Homemade chili garlic sauce

For one day only, put aside your concerns about bad breath and indulge in twenty-four hours of delicious garlic-goodness. Lets start making your very own chili garlic sauce.

Ingredients: 
  • 2 cloves of Garlic (peeled)
  • 6 ounces of mixed hot chilli such as cayenne, herbanero, jalapeno, serrano, red chilli pepper (chopped)
  • 1/2 tablespoon salt
  • 1.5 tablespoon sugar
  • 2 tablespoon white vinegar
  • 2 shallots
  • 2-3 tablespoon peanut/sesame oil

Directions: 
  • Slightly roast the garlic cloves on a griddle with the help of few drops of oil.
  • Similarly,  in a separate pan saute the minced shallots gently till the rawness disappear. Now turn the heat off and leave the shallots in the pan
  • In a food processor, add all the chillis,  garlic, salt, sugar, vinegar and process to a coarse texture.
  • Now add the chilli garlic paste in the shallots, turn the heat to simmer and blend well for 5 minutes.
  • Turn off the heat and let the sauce sit for 2 hours in order to let the flavors mingle well.
  • Transfer to a jar and store it in the fridge. Enjoy :)
